Planning and 'Pantsing': How to Blend Structure and Spontaneity

So.
Tuesday, I started a new project. Had an informal plan in place. Even wrote the opening line a few different ways in my head. Sat down, started typing. I’m now 7500 words in and it's completely not what I set out to write.
What was supposed to be the opening salvo in a new series about a camgirl and her friend who helps out became a story about the start of their friendship, his need of redemption for a crime he committed against her.

Just discussing plotting with my writing group. A few of us are stuck trying to plot our next novels and we're just not making progress. We've got characters, snippets of dialogue, and a few scenes – but we can't string together a plot.

We've come up with the idea of pantsing our plots. We're just going to start sketching out our outlines and see where we get to.
