(Our) Mom's Matzo Ball Recipe [a thread, because I had opinions when I typed this up]

Introduction:
Experienced matzo ball makers (e.g., Mom, Rebbitzin Gladys Gewirtz, z'''l, and Aunt Gladys, z'''l) speak of batches in terms of how many eggs you use. A full batch is four eggs. This recipe is for a half batch. It can be multiplied or halved with little modification.

Verrry quiet Thanksgiving here, just me, Mom, and our Thursday aides in and out, thankfully willing to work today. Only sign of the holiday is the aroma of my go-to holiday meal: chicken soup and knaidelach (matzo balls). (Or sometimes veg soup and same.) And our CSA gave us cranberries last week, so I also made cranberry sauce. Never done it before, and it's super easy.
So are #knaidelach, btw, 10 min start to finish. Will post #FamilyRecipe in replies.
