I just did a braised partridge Egyptian style!
The recipe calls for squab (with giblets) and hakeem or bulgur, but I substituted partridge for the squab and a wild rice/chestnut mixture for the bulgur. The partridge didn't come with giblets, unfortunately.
It's resting now for a few minutes before I dig in. The pan sauce from the braise is heavenly.
