Hi All,

I have a question about #Barbeque. I believe I've been given contrary information. When making #BurntEnds, my understanding is that you cut them up when they are "almost done" cover them in #BBQ sauce and put them back into the smoker for a few more hours. I've also heard that meat will not take smoke after around 160 F from a different source. "Almost done" must be above 160, right? If that's so, wouldn't smoking further be pointless?

Yesterday I smoked a #PorkShoulder. After deboning, I cubed up about a third and turned it in to #BurntEnds. The other two thirds was turned in to delicious #PulledPork.
