VEGAN CRETAN DAKOS WITH TOFU FETA 🌱

This is a classic recipe from the Greek Island of Crete. It’s called dakos (ντάκος) and is served as a meze (appetizer), and consists of barley rusks, finely chopped tomatoes, crumbled vegan feta, oregano, olives, drizzled with extra virgin olive oil. A simple, refreshing and satisfying dish, perfect for sharing.πŸ˜‹

⇨ INGREDIENTS (serves 2-3)
🌱2 large Cretan barley rusks* (we used the Samaria brand)
🌱1/2 cup water (1/4 cup for each rusk)
🌱2-3 Tbsp extra virgin olive oil
🌱2 medium tomatoes, finely chopped
🌱80g/2.8oz tofu feta (homemade or store-bought)
🌱black olives, to serve
🌱dry oregano and cracked pepper, to taste
🌱Optional: iodised salt, to taste

⇨ INSTRUCTIONS
1. If using homemade tofu feta, make it at least one day prior. (Recipe for tofu feta: https://www.veganeasy.org/recipes/best-vegan-tofu-feta/ )
2. Place the rusks on a shallow dish and moisten them with 1/4 cup of water for each, then drizzle with about half a tablespoon of olive oil each.
3. Finely chop the tomatoes and place on top of the rusks. Then crumble the tofu feta and also place on top. Sprinkle with oregano, cracked pepper and drizzle with the remaining olive oil.
4. Serve with black olives and use a small fork to break apart the barley rusks when ready to enjoy.

Note: *Cretan barley rusks can be found in Greek delicatessens or at online stores.
