Prof Alexandra Johnstone is a senior figure at the Rowett Institute in Aberdeen and she has worked with retailers, such as M&S, to create healthier food options. But she is also tackling food inequality and told me she hoped the Scottish and UK Governments would realise how many families are struggling during the cost-of-living crisis.
