My trusty recipe for cooking leafy greens: Mutabbal.
Muttabbal* is a Palestinian/ Levantine food preparation method for any bitter leafy greens (spinach, kale, chard, khubbeyzeh, dandilion), green beans (mostly fava beans), as well as some veggies (zucchini). It literally means: cooked with spices. Think of it like the East Asian stir-fry, a preparation method.
Recipe:
- Chop and cook an onion until translucent, add garlic.
- Add chopped leafy greens.
- Add spices: salt, pepper, sumac, and optional hot sauce.
- Stir-fry / cover to steam until wilted.
- Finish with lemon juice and pomegranate molasses to taste
- Serve with rice or any grain.
Everything should be done in 10 minutes. You can add cooked meat or beans for protein.
