Transformed weekend leftovers into a tasty Monday frittata at my Brussels Airbnb. 🍳✨

Ingredients:

½ onion, diced
½ courgette, grated
Bacon lardons
3 mushrooms, diced
3 eggs
A splash of milk
Butter
Salt & pepper

Sauté veggies & bacon, pour in beaten eggs & milk. Cook gently, finish under the grill. Breakfast made, and extra to take on the train back to Bristol.
