I got tired of Zoom always installing a shortcut on my Windows desktop, so I went rummaging around in their published .reg file and found the following:

[Computer\HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Zoom\Zoom Meetings\General]
DisableCreatingDesktopShortcut REG_DWORD 1

I don't know yet if it works, but I'm just tossing it out there in case anybody else finds it useful.
