What are your thoughts regarding NVIDIA vs AMD? Why an RTX3070 and not one of the new RX6000?

I recently finished by "last-gen-build" where I got some real steals on an #3900x and a #rx5700xt

Now a question of which liquid AIO I should get for this AMD chip. Not a fan of fans. I need even heat dissipation for optimal cooling since the chip generates heat a over the surface, its not enough just to have contact with the center of the chip. I need a copper water block plate that will smother the chip

Any suggestions?
