It's Cookie's birthday today. She's 14. Many happy returns, Miss Wuschel.
In the work canteen today, a bat was fluttering around up in the rafters, obviously lost and distressed. Everybody was watching it while they ate lunch. I waited until it was flying low near a doorway and managed to shoo it outside. So I'm the official company bat charmer now.

And how was it?

Shockingly good. As in, I will definitely add this to the rotation for the future mid-week lazy recipes. I didn't do rice with it, but I did have a small salad, and my partner and I finished off the 9" / 22cm square pan handily.

The magazine recipe suggests some choices for change:

  • Add curry sauce (sounds good!)
  • "Replace the chicken with casserole or pork fillet - or any other protein." I think for this you really want something soft, so maybe don't put beef in there, I think it'd unbalance it. They mention salami and artichoke hearts, and that sounds good too! Maybe hearts of palm. Hmm.
  • Vegetarian: swap chicken for quorn. Hard to get quorn here but any textured vegetable protein substitute is gonna taste good in this.
  • Flying Jacob without banana - why? it's a core flavour in the dish!

Honestly, I will probably swap the heavy cream out for some thick coconut milk next time.

I'm intrigued by the other recipes mentioned: sandwich cake, Creole's casserole, and Bombay Bromma stew. Hmmm.
