My single most contrarian — and yet objectively correct — take is that blue crabs should be cleaned *before* they are steamed, not afterward. Otherwise all of the delicious old bay seasoning gets disposed with the shell. (Unless you subscribe to the “burning hands” theory of spice transfer.) Yes I realize this opinion is not kosher in these parts.
