Thanks to memtest, a lot of time, and little pinch of dichotomy I found the one of my 8 RAM modules that was defective. 4 defective bits. Out of 256 billion (32GB module).
So my system crashed randomly because of 4 bad bits out of 2048 billion. OK then....
