Preheat oven to 425°F/218°C
Wash and peel a sweet potato or two. Cut into round slices ~1/2" thick (you can halve or even quarter these if it’s a real girthy boy). Coat generously with olive oil, salt, black pepper. Arrange slices in a single layer on a baking tray. Bake on bottom rack for 25-40 minutes until bottoms have developed a rich caramel brown color. Let cool before using a spatula to remove slices from baking tray.
Use these as a salad topping with apple slices, feta, nuts, kale, cranberry, whatever you want.
