@idesofmerch You are right. There are two types of potatoes: starchy and waxy. Starchy = really good mashed potatoes. Waxy = really good potato salad. Also heat your milk/cream/butter/&c. before adding and add while potatoes are really hot. It prevents the potatoes from getting gluey and gross.
