Hi! I'm using the official mastodon for android app and even tho there is no "add" button on the header in edit mode, it still is clickable and I was able to change my header like this.
I don't know if your instance's owner could have disabled this feature tho, if it don't works, try using the website of your instance (in your case it is https://mstdn.social/)
