If I wanted to learn to port Windows games to Mac/Linux (working with those low(er)-level APIs and such)... where would I start?

As part of an optional assignment, I managed to write a program in binary (for an 8-bit emulator) that prints a tiny histogram.
I've never been prouder of something so useless. :')
