We are excited to bring another worldwide coffee tasting, and this time we'll be exploring fermentation.

Why am I dressed as a sea captain? To tell you all about PID controllers. Obviously

A PID is basically a very clever thermostat. Instead of just turning a heater on when things get cold and off when they get hot, it constantly predicts and adjusts power to keep the temperature exactly where you want it. In coffee machines, that means stable brewing temperatures, and more consistent, better-tasting coffee.

I air fried coffee beans in a few different fats to find out if any one of them would be mildly palatable…

And the results surprised even me.

Adding sugar to your coffee may be the norm, but what about salt? I tried adding a (small) touch of sodium to see if it could turn even a basic blend into something more drinkable.
I discovered that different temperatures of coffee beans ground differently. Does this mean you should be microwaving your beans for better coffee?
Coffee grown in the UK is a rarity, but that does’t mean coffee trees don’t exist around the country…

If the new year has you thinking about coffee a little more seriously, tasting is a good place to start. Here’s a handy guide to get you started on what I’d consider to be the essentials.

Is healthy coffee really the better choice? Or just a fad?

There are admittedly traces of things like lead and mercury in coffee that aren’t great for you. But it turns out we can measure them and take a proper look at whether “healthy coffee” is actually a thing. So let’s compare and contrast to see which coffee brands get a clean bill of health.

Seasons greetings with this coffee cocktail. Stay warm this Christmas with this delicious Amaro recipe.

Give it a try:

1. Combine 200g bourbon with 40g very finely ground coffee in a cream whipper and charge for 5 mins.
2. Add 55g whole milk to coffee-bourbon in a jug. Don’t worry, it’s meant to curdle. Just sieve the mix until clear.
3. Add your botanicals (bitter orange peel, gentian root, cassia, nutmeg, allspice and vanilla).
4. Charge, shake, release, charge, then wait 5 mins.
5. Give your mix a final filter, add 60g demerara sugar and 2 drops of saline (maybe a splash of water).
6. Serve over large ice cube, some orange peel and enjoy!

You can make this your own by playing around with the spices or even change the base spirit. If you like your coffee cocktails bitter, this might just be your new favourite.
