It's funny, but with GDPR and patients' rights and data protection, it keeps shocking me that doctors' offices will email you the flippin form you filled in. I spoke with @brianhonan about something similar (but not this) a short time ago and I reckon he's more right than wrong that most modern email is protected with TLS, but this just strikes me still as wrong.
