When ingredients are integrated and the paste is simmering to a paste, check for taste. If apples are to sweet but not tart add lemon juice. If the apples are too tart add some salt. If charoset needs more sweet taste syrup or sugar. Check for the charoset spice mix and add to taste. Let the mix dry out until it gets a sticky paste texture for tonights Seder.
