Wieso in chroot? Ich würde erst einmal die Partition einbinden, auf der /boot liegt und dann nachsehen, ob das Verzeichnis leer ist. Wenn ja, wirst du vermutlich Kernel, init.rd, EFI und grub neu installieren müssen.
