Well, there you go. It needs to rest for a bit, but I couldn't wait any longer. Crusty on the outside, tender and juicy on the inside. Gonna call this one a success.

@JamesNielsen I use a mix of apple cider vinegar, garlic, oregano and basil. Bit of good oil. Lots more garlic at the end.

@sunumbral @TheEddieShow a guy I used to work with got me started on this. He made lunch for eight people, all the employees, for ten dollars. Fried cabbage and seasoned round steak on cheap rolls, and it was amazing. Been trying to drive down cost while eating better ever since, and it's been an adventure
