This honey in Ukraine, generally acknowledged as world best, with certificates to prove it, is also becoming the rarest.The war does that, and as the beekeepers fall in battle so does much of the tradition of making honey. And yet still in the market I find her, weather-beaten smile on her face, selling a solitary pot, home-made of course. She also has a handful of beeswax candles, this wiry, strong, smiling woman from the village. With the blackouts I need them, for the bombs continue to fall.
