Born sometime in the last century, Yvonne embodies typical Mountain beginnings – log cabin, midwife, and all. 
Mountain stories and their origins hold a deep fascination for her. Pork Loin Chops & Rice Bake
2 cups uncooked brown rice / I would use white rice
2 cans beef broth
2 cans French onion soup
1-2 cans sliced mushrooms, drained
1 stick butter, melted
Salt and pepper to taste
Garlic powder, to taste
Combine all ingredients into a casserole dish. Add chops on top of rice mixture. Bake at 350° for 45-60 minutes.
