Almond Milk-like Drink... Almost anything and certainly any? nut can be 'milked', that is, turned into "milk." Riced Cauliflower isn't rice, but it's resembling rice in shape and texture.
It's using a familiar reference point. Just call it milk. It's fine. Read labels. It's fine. It's OK that you've gotten confused, and there are so many marketing tactics and mislabelling allowances that are more than annoying and often border on dangerous for consumers.
