...Now it pickles in the brine for ~4 days. Waiting...
I've just made the brine/marinade for this year's sauerbraten; sorta following https://houseofnasheats.com/sauerbraten-recipe/#wprm-recipe-container-18446
but with some extra mustard seed, coriander, allspice and fresh ginger. To say that our kitchen is pungent ATM is something of an understatement. πŸ˜‹πŸ˜‰

sweet Italian Sausage, Canadian Bacon, mushrooms, onions, olives, red bell pepper, and fresh basil (added after baking!)
