I forgot to mention, I filtered the pear juice with a small mesh colander, so between crushing and filtering it wasn’t grainy at all. Fairly smooth with the egg foam top with it. I used Tanqueray, a London dry gin.

I love rhubarb, that sounds like a great drink! I don’t recall every seeing a rhubarb liqueur at the store, but now I got something new to hunt for. Thanks for the inspiration!
