What are some good FOSS note taking apps that could rival onenote? Did some cost cutting in M365 licensing and an end user is bummed about losing the onenote app.

Has anyone tried putting a 2nd or 3rd gen AMD EPYC proc in a Dell Poweredge 6415? I have found nothing on the internet if this is possible. Looks like generation 1-3 share the same socket. Im guessing if I tried it probably wouldn’t post. I can pick up the 6415’s 8 bay for under a $1000 now. That is sucky thing about working in SMB, non existent IT budgets.
