Fresh Shrimp Spring Rolls

Ingredients:
For the Spring Rolls:
medium shrimp, peeled, deveined, and cooked (cut in half lengthwise if desired)
rice paper wrappers
vermicelli rice noodles, cooked according to package instructions
lettuce
carrot, julienned or shredded
cucumber, julienned
fresh mint leaves
fresh cilantro leaves
fresh basil leaves (optional)

Best Spring Rolls Dipping Sauce:
½ cup peanut butter
½ cup hoisin sauce
⅔ cup boiling water (or coconut soda)
2 cloves garlic, minced
2 teaspoon freshly squeezed lime juice or vinegar
1 tablespoon chili crisp oil
crushed roasted peanuts, for serving(optional)

Make the Dipping Sauce:
Boil water on the stove or in the microwave. In a medium mixing bowl, add boiling water, peanut butter, hoisin sauce, and lime juice (or vinegar). Mix until well combined. Note: The sauce will thicken up as it cools down. Add more water, if needed, to reach your desired consistency. Spoon some into individual dipping bowls. Garnish with crushed roasted peanuts or more chili oil.

Spring Rolls:
Shrimp: If not already cooked, boil or steam the shrimp until pink and just cooked through. Chill in ice water, then peel and devein. For easier rolling, slice each shrimp in half lengthwise.

Noodles: Cook the vermicelli noodles following the package directions, drain, and toss with a few drops of oil to prevent sticking.

Vegetables & Herbs: Wash and prepare the lettuce, carrot, cucumber, and herbs.

Soften the Rice Paper:
Fill a large shallow dish or pie plate with warm water. Dip one rice paper wrapper into the water for about 10-20 seconds until it softens. Be careful not to over-soak, as it can tear easily. Lay the softened wrapper flat on a clean, damp kitchen towel or cutting board.

Assemble the Spring Rolls:
Place a small handful of lettuce, noodles, carrot, cucumber, and herbs in the center of the rice paper. Lay 3 shrimp (cut side down if halved) on top of the vegetables. Fold the bottom of the wrapper over the filling, then fold in th
