It's almost that time of year! I like rubbing the turkey down with creole butter and roasting it on a bed of onions, celery, carrots and a variety of dried chilis. Everything goes into the soup pot after carving and that turns into one hell of a soup stock for turkey tortilla soup!

Add back some turkey, avocado, radishes, sour cream, crispy tortilla chips or whatever else floats your boat!

This is easy, and it's about as far away from thanksgiving dinner as possible!
