Just reporting that my Gardena undertaking (a gift) was a success, thank you all who contributed thoughts and advice!
@Raffo I totally agree. When I think about what works there, it's the fact that you can go there any time of day and you could be in a group of 1-4 and it would make sense under all those circumstances, plus self-service and a limited menu keeping their costs down. The fine bakery is more what seals the deal. I love their "baguette tradition" so much.

@Raffo Yeah, I have started to strive for an unattached approach to Kreuzberg 36 and its food situation. Occasionally good food will appear here, it will probably be ephemeral, I will appreciate it while it lasts.

I love to see the rare example like La Maison where they are baking really good bread and clearly raking it in.

@gembarrett It also feel like this general phenom of govs refusing to think ahead, even about inevitabilities.

In Berlin, it's been clear for 5 years that we're heading for drought. Maybe this summer, maybe next. It looked like it would happen last summer. But with all that pure-luck bonus time, there's been no plan. Maddening; you can do almost anything in a municipal system in 5 years, but nothing overnight.

We've had rural wildfires for 4 years but it keeps being reacted to like a surprise.

@zoejessica Excellent point. Now that you mention it, doughnut compatibility is a woefully under-explored area in human factors research.

Prècis: will go back for cake doughnuts because I too am an Old Fashioned, and on @Raffo's suggestion, a Lemon Meringue will definitely be tried in the future. As suspected, the economics of this place look like they are flatly impossible, but maybe they will get a distribution deal with The Barn or something else suitable.

Eva had the Crème Brûlée and it didn't quite work as a doughnut.

We shared some of a plain and it was good, however, the lattice in the dough was too strong – this was a very springy doughnut where you would more expect it to collapse under pressure.

I think this is an accident of taking the patisserie approach, because as far as a I know, there is no German or French proper bakery treat with that internal structure. However, you can get it at the fair: Schmalzkuchen is the most similar.
