Yesterday we released cert-manager v1.17.0 🎉
New features include: promoted feature gates, easier keystores for JKS/PKCS#12 and a helpful change to hashing algorithms used with RSA for better compliance.

That should be possible yeah. If you're using Let's Encrypt the only thing to be careful of is rate limiting, but you should be OK with just a couple of servers.
The DNS-01 challenge just requires API keys for updating the DNS provider.
You'd not be able to easily use the HTTP-01 challenge, but the DNS-01 challenge should work fine!
