But the thing is...I'm not sure what red velvet is actually supposed to taste like. Maybe it's supposed to be its own unique flavor? I really wanna do a cream cheese frosting with a roux base, though...!
@jennatar oh yeah, I knew that part ^^ something about the cocoa powder reacting with the buttermilk & vinegar to make it red, & the color being enhanced with red food coloring? but I'm not sure how prominent the cocoa flavor is O:
@cfmv I thiiiiink... it's subtle, but it's definitely a "cocoa" flavor. I think the only reason people don't automatically "parse" the cake as chocolate is just the aesthetic dissonance? Just because it isn't brown! It's so weird and wonderful
