They are likely viewing the profile that is saved locally on their instance.
Ex: Someone visits your profile on mastodon.cloud. There, your entire post history shows. They then remote follow you from idreamof.ryukyu. idreamof.ryukyu then starts keeping track of your profile. Since idreamof.ryukyu just started keeping track of you, your profile when viewed from idreamof.ryukyu looks empty. Your posts will still propogate as normal though.
