Okay, enough server stuff, I'm taking y'all on a #cooking adventure.

I almost tagged cooming there, which would have attracted a
very different audience.

EITHER WAY, STEP 1: Egg Boiling

Half dozen in a pot, fill pot with water, put pot on stove, turn burner on. Once it's boiling turn it off and let it sit until the rest of this shit's ready.

This and the mayonnaise are the only non-vegan parts, but the boiled eggs can be skipped, and the mayo can be made with a half cup soy milk instead of an egg. I will say, though, this potato salad isn't that great without the eggs. You'll see why later
NEXT STEP: MAYONNAISE
I don't buy mayo. This isn't because I'm too good for store bought mayo, I just don't use mayo enough to keep it in the house, so I just make it when I need it for recipes like this.

Tools needed: Immersion blender
Ingredients:
- 1oz (2tbsp/30ml) vinegar/lemon juice (I'm using red wine vinegar)
- 1 egg
- 1 cup (~240ml) oil (soybean in my case)
- 1/2 tsp (2.2g) season salt (tony chachere's in my case)

Process:
Egg, salt, vinegar in blender
Blend
1oz oil
Blend
Repeat oil 7x (total of 8 oz oil)
Done

You can replace the egg with 1/2 cup (120ml) of soy milk

Now for the reason that most people think it's cursed:
- Boil a kettle of water
- Mayo goes into a larger bowl
- Pour just shy of 2 cups of mashed potato flakes into the bowl and mix. Doesn't have to be great, just trying to get the mayo dispersed
- Add water until you like the consistency
- Mix more season salt in to taste (I did 1/2 tsp)
- Chop 3 boiled eggs and mix into salad
- Cut remaining 3 into quarters or eighths and arrange on top however you like
