Haven't been eating much recently so decided to make one of my favourite foods to encourage me for a few days. Crispy chilli beef, and some chow mein for good measure

I actually got the beef right this time.

Every other time I've made it, it went more soggy than crispy as soon as the sauce hit it, despite increasing cooking time with each attempt,. 'd basically cooked it until it was crispy and left it at that.

This time I didn't cook it, I cremated it. I left it in oil a lot longer than I really felt comfortable with and it seems to have worked perfectly

@babe When I did cook that kind of thing the crispy chili beef was a real challenge with timing and flavouring, looks like you nailed it though!
@stx I cheat a bit by doing it in stages. The beef is cooked followed by veg, sauce mixed in a jug then all combined at the end. Saves the awkward timing in everything
@babe @stx This is the way. We have a big Thai peanut noodles dish we do periodically, and I do exactly the same—protein, then veggies then noodles, then it all comes together.
