One of my big goals this year is to reduce waste when processing my #MeatRabbits

Last year I saved the meat, pelts, and tails. Everything else went in the compost.

This year I'm also saving the ears, all four feet, the fat, and choice organs (heart, liver, kidneys)

I want to figure out a use for the skulls and brains, but we're not there yet.

If I had chickens they would get the "leftover" organs (lungs, stomach, bladder, intestines), but alas

@Axiom I can highly recommend rabbit brain in a soup. Similar to the way goat is processed.

Or as a spread on bread, the way it's done with beef bone marrow sometimes. 😄

@LokeMani do you cook it before spreading it on bread?

Soup seems the most palatable way to try it ... eventually 😅 organ meat is not a regular part of my diet, but I'm warming up to the idea.

How easy is it to remove from the skulls? Or do you just boil the whole head?

@Axiom Yes, you cook it first until it's really soft and mix it with herbs to make a spread. I'm partial to some salt and marjoram.

And on the topic of how to get it out, imo it is easier to scoop out after boiling, but that ofc necessitates cleaning the skull well before cooking. So whether you prefer to scoop it first or after, or if you decide to crack open the bone, is up to personal preference and convenience.

After boiling the carcass you can also pull the marrow out of the spine. It's very similar to the brain. My mom always tells me how her and her siblings would fight over who got to snack on the spine, because it's delicious and there's not much to be had. 😆

That definitely makes me want to try the brains ... I'll for sure save them next time.
