I like good story, especially. My latest good one was Nier: Automata, but I'm open to a lot of stuff.
Open worlds are not a requirement. I'm fine if it pushes me through the story, and often prefer that to a weak story with open world.

Another one that is more of a action RPG and reminds me of Secret of Evermore (SNES) is Eastward.
Some less RPG-y games that have good story.
Deliver Us the Moon. Post apocalyptic, but good 3D adventure game.
TOEM: Not plot heavy, but it tells a fun tale and is a very relaxing game.
Sherlock Holmes - The Awakened: Adventure game by a Ukrainian developer that meshes Sherlock with Lovecraft. (On sale atm $3.99)
Beautiful Desolation: South African adventure game. I don't remember if it's straight fantasy, or post apoc fantasy.
An adventure game with a really near artistic and narritive hooks is The Return of the Obra Dinn.
Something that might be up your alley is Heroes Hours Contract and its sequel. Magical girls form a union against their familiars Fun duology. Well, there is a third one on the works on PC.
I believe The Witcher 3: The Wild Hunt is on the Switch. Best you can get. Open world, meaningful side quests that feel like complete story lines in their own right. Incredible DLCs (get the Complete Edition and don't look back).
I don't know about graphics and performance on the Switch, though...
