@Heartofcoyote best pan for pancakes. High thermal mass means very even spread of stable heat.

@Heartofcoyote you can see it suffers a bit from heat, but it is much nicer on the hand than an iron handle! It's nothing posh, it's a cheap, I think Indian-made, pan; but it's a nice one. I keep it for just pancakes and omelettes, because that way I can keep it seasoned and never need to scour it.
