No one told me I had to figure it out myself but the secret to perfect grilled cheese color is apparently extremely low heat
@Grisser The other trick is mayo works better than butter.

@VersWolf I'm glad you said it, because I was going to say it, but that would entail admitting I don't _entirely_ shun mayonnaise, which would be politically difficult.

@Grisser

@isocat @VersWolf I've heard about this but keep forgetting
@Grisser @VersWolf _Thin_ film of mayo; easy does it. Use less than you think you need, else greasy.
@VersWolf @Grisser I disagree
@toddbuddy @Grisser Disagree because it's mayo or just don't think it crisps and browns better than butter?
@VersWolf @Grisser I don’t think the mayo tastes as good as a browned butter
@toddbuddy @Grisser That I can see. I especially like it with Kewpie mayo though... and a good parmesan cheese crust on the outside.

@Grisser I do it in the deconstructed Matty Matheson way, I think it just comes out better.

Toast breads under broiler with olive oil and garlic powder
flip to toast other side
mayo
heap cheese on both sides of bread
put back under broiler until melted
put sandwich together
