Made whole wheat pita in the new oven - they came out great (1/2 freshly milled wheat and 1/2 King Arthur AP flour). About a 65% hydration
@dimsumthinking ridiculous question, perhaps, but are those hollow-ish? I think I’ve only seen pita in pockets, waiting to be filled with other food, or very flat, for use with hummus.
@keithg it’s magical - they go in flat and develop an air pocket in the middle so they are hollowish
