More pics of the phases of making mattar paneer. Mattar = peas. Paneer = cheese. The tadka has reduced and turned color. The process is similar to sofrito. Then the peas and paneer are added and combined. About 2 cups water are added, brought to boil and then simmered 15 min. Made ahead so that the paneer continues to soak up the “curry” known as tari (gravy or broth).
