They have 3 unique drops, get attacked by wolves, foxes, and cats, take fall damage from bad path-finding, and have barely any health to boot. They're small and they run away, so even when they haven't been killed by foxes and fall damage you barely get to even see them.
They also reverse growth on carrot crops, which gives players another reason to kill them.

And whenever I see suggestions to make them more interesting, it's usually by giving their drops more uses.

Domesticated bunnies exist in real life, them not being tamable feels weird when you can tame wolves (dogs), cats, and parrots. They gave them new animations, it would be neat if you could reasonably see them ingame.
