Has anyone figured out how to access Unicode glyphs in native macOS programs (Pages, Keynote, Numbers) after the latest system updates? For example, tabular figures, small caps, ligatures or alternative characters?

cmd-T for the font palette, then the …-menu in the top left corner for the typography palette.
