@Herbivore coconut nectar is honey without the bee, but date syrup is an original 'honey' - because of honey dates. It might be before or after animal honey - who knows. I try to keep it authentic. Add some flower pollen (like fennel) and it's a treat. I like eating 'honey' flowers directly (like honeysuckle) so I don't need to be hit by excess sugar.

@Herbivore I just use fruits and berries (fresh or dry), sometimes maple syrup.
