Tonight was Enchiladas Sunday

The chicken enchiladas were consumed too quickly to get a proper photo so a partial tray of those and a full tray of beef. Was able to get sauce from Hatch and a can of green hatch chilis as well. So this was tasting like it should. The red sauce is exquisite and I don’t know if I could make one as good myself.

Tonight everyone got a choice of red or green. All chose red and green.

@nonlinear I’m originally from near Chicago, moved to Japan, moved back to the SF Bay Area but totally in love with New Mexico food and Mexican cuisine. Been in NZ for 20 years and recently gone hardcore making my own stuff - tortillas, sauces, etc. Mole is my next big challenge.

Have obtained hatch chili seeds which have sprouted well currently so going to see if I can get a really good harvest and also save seeds to keep growing them. Also tepin among others. Certified (certifiable) chili head I guess.

@sumisu3 Nice. I grew up in Albuquerque, and we import a case of roasted hatch green chile at least once a year. I have a legit red chile recipe if you're interested, and you can get the pods here, or use red chile powder. They both work quite well.

If you have any seed pods or seedlings I can buy off you, let me know. I'd love to grow some hatch peppers.

I’d love a recipe. And if you are in the Auckland area I can get you some seedlings later this month or so once I get them transplanted into pots - and growing well. Else, we can sort out some seeds after harvest.

I also am growing artichokes since I miss those from my California days.
