Induction range top. Quick on, fine degree of control, quick off, little heat radiation. Better than gas. Only adaptation was flat bottom wok which makes the working world go round is not quite the same experience.
Keeping it clean with minimal effort compared to a gas range was unexpectedly my favorite part
I find it even easier than a glass top electric (what the induction replaced) I think it is because only the area directly below the pan is heated, spills are easier to wipe up and don’t get baked on.

It’s the pan that actually gets hot and not the stoves burner. Because of that, you can cook on top of something like a paper towel. Makes sliding the pan around easier without marring up anything and cleanup is even easier if you spill/splatter. Can reuse it if it’s still clean.

Induction is great for people with kids for the same reason. The second you take the hot pan away, the stove isn’t gonna melt your skin off if you touch it. I can usually place my hand right on the burner after taking the pan away. It’s just borderline uncomfortable instead of instant burns. If the kids turn the burner on and there aren’t any pans on the stove then nothing happens. The stove should just turn the burner back off after a couple seconds and you need to turn it off/on again to reset it.

My coworker just did an ‘invisible induction’ cooktop which is just a fancy way of saying they’re mounted under the counter instead of a more typical panel installed in it. I’ve seen people put the control panel on the back like this picture, a cut out on the counter, in a little drawer that pulls out under the counter, etc. Induction is just really cool…
