Lucas GarronPSA: If you opted out of Apple Intelligence on your devices, make sure to double-check your opt-out after every single OS update (including security updates).
I have opted out over half a dozen times, but, but Apple keeps forcing Apple Intelligence back on during OS updates and I have to go and manually turn it back off after the update every single time.
(If you don't turn it off, your device re-downloads gigabytes of models. Hope you're not on a metered connection!)
