@jrefior how'd the carrots do raw? We typically do onions, garlic, green peppers and tomatoes, and jalapenos for me

They were good! From raw, then baked at 450 F. Carrots don't need much cooking.

But the garlic-infused olive oil I dressed it with carried the day for flavor.

Tomatoes and jalapenos would be good additions.
