@RiversideBryan i am new on pixelfed but confused why there seem to be relatively few posts. can I only see those on home server? of so how can I see stuff from others?

The "global" feed hasn't been released on the App yet, I'm tod it's coming soon.
Home is all the posts from people and hashtags you follow. "Local" is everyone on your server.

@RiversideBryan i follow a lot of climate and democracy activists on insta and would really like to keep up with them also on pixelfed. or I guess mastodon if it allows for similar short videos and meme rolls etc

Are you using the Pixelfed App, or a different way?

If you're using the Pixelfed App, there's a Discover page. It's the icon on the bottom, just to the right of the plus sign (for creating a new post).
At the top of Discover page is a scrolling list of hashtags that are trending Fediverse wide. Politics is always on the list, and memes are popular here too. Find the hashtag that interests you, and it will show you all the recent posts with that hash tag.
